The Variables tab on a finished builded seems to try and show only the variables used by a build. I've got at least a variable used by the notification stage (to determine whether to send emails or not) and this variable and it's value isn't shown. It's possible the problem isn't limited to this location.

| This is intended. Variables tab only records all variables in the build itself (so that the build can be reproduced if necessary with these variables). Variables used in notification does not affect the build process and will not be tracked. |
